Spiced Pineapple Jam Tartlets

Ingredients

  • 1 can (20 oz.) DOLE® Canned Crushed Pineapple in 100% Pineapple Juice
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp star anise, ground
  • 2 egg whites
  • 1/2 cup confectioners’ sugar
  • 1/2 cup desiccated coconut, sweetened
  • 1 sheet of pie dough
  • - zest of 1 lime

Method

  1. Preheat oven to 375 degrees.
  2. Heat a small sauce pot over medium-high heat. Add pineapple and spices and cook to reduce and caramelize the pineapple, roughly 10-12 minutes. Stir frequently to prevent burning.
  3. Whip egg whites and sugar in a stand mixer on high speed until stiff peaks develop, while the pineapple is cooking. Fold in the coconut and place in a piping bag.
  4. Roll out dough to roughly ¼ inch thickness and cut to line 4 tartlet molds. Scoop in pineapple jam and press smoothly to the bottom of the pastry. Pipe the meringue (egg white mixture) on top of the jam in any design you like.
  5. Bake for 12-15 minutes, or until the pastry is cooked and meringue is golden brown.
  6. Zest the limes over the top of the tartlets and enjoy either cold or warm with an optional scoop of vanilla ice cream.
