Sparkling Mezcal Pineapple Ringer

  • 1 tbsp butter
  • 1 tbsp brown sugar
  • 1 can (8 oz.) DOLE® Canned Pineapple Slices in 100% Pineapple Juice, drained
  • 4 oz mezcal
  • 8 oz DOLE® 100% Pineapple Juice, chilled
  • 8 oz sparkling water, chilled


  1. Heat butter in a small skillet over medium heat. Add sugar and stir until melted.
  2. Add pineapple slices and grill until both sides are lightly browned and caramelized.
  3. Prepare 4 glasses by adding one grilled pineapple slice to each glass.
  4. Pour 1 ounce of mezcal and 3 ounces of pineapple juice over the pineapple slice in each glass.
  5. Top each with 2 ounces of sparkling water and serve.
