Pineapple Salsa Verde

  • 1 pound tomatillos, peeled
  • 1 yellow onion, cut in half
  • 1 cup DOLE® Canned Pineapple Chunks or Tidbits
  • 3 cloves of garlic, peeled and chopped
  • 1 jalapeno pepper, chopped


  1. Roast tomatillos and onion in the oven at 375 degrees until soft, about 25 minutes. Remove from oven and set aside to cool for half an hour.
  2. Combine tomatillos, onion and remaining ingredients in a food processor and pulse a few times to reach a chunky consistency.
  3. Serve with chips, cooked chicken or on top of goat cheese.
