Pineapple Salsa Verde

Your guests will love this fresh spin on salsa. Pineapple and tomatillos make this spicy, sweet and special!

Ingredients

  • 1 lb tomatillos, peeled
  • 1 yellow onion, cut in half
  • 1 cup (8oz.) DOLE® Pineapple Tidbits in 100% Pineapple Juice
  • 1 jalapeno peppers, diced
  • 1 garlic clove(s)

Steps to Sunshine!

  1. Roast tomatillos and onion in the oven at 375 degrees until soft, about 25 minutes. Remove from oven and set aside to cool for half an hour.
  2. Combine tomatillos, onion and remaining ingredients in a food processor and pulse a few times to reach a chunky consistency.
  3. Serve with chips, cooked chicken or on top of goat cheese.
