Pineapple Chicken Quesadillas
This is a great entertaining dish.
Ingredients
- 2 tbsp butter
- 1 can (20 oz.) DOLE® Canned Crushed Pineapple in 100% Pineapple Juice
- 1 lb boneless, skinless chicken breasts, cooked
- 2 tbsp hot sauce
- 2 cup shredded Mexican cheese blend
- 8 flour tortillas (6-inch)
Method
- Melt butter in skillet and stir in crushed pineapple; cook until pineapple is lightly golden. Add chicken; heat through. Remove from heat.
- Stir together cheese and hot sauce. Set aside.
- Spoon pineapple chicken mixture over four tortillas. Sprinkle cheese mixture over and top with remaining tortillas.
- Heat quesadillas in skillet over medium heat until crispy on both sides.
