Peach Panzanella Salad

Ingredients
- 2 cup cubed crusty bread
- 1 mixed greens salad
- 2 cup DOLE® Jarred Sliced Peaches in 100% Fruit Juice, drained
- 1 cup halved campari or cherry tomatoes
- 1/2 cup toasted pecan halves
- 1/2 cup crumbled chèvre goat cheese, crumbled
- 2 tbsp basil, chopped
- - For Dressing:
- 1/4 cup reserved peach juice
- 3 tbsp olive oil
- 2 tbsp champagne vinegar
- 1 tsp dijon mustard
- 1/4 tsp salt
- 1/8 tsp cracked black pepper
Method
- Preheat oven to 375ºF and spread cubed bread on a medium baking sheet. Drizzle with olive oil and toss to coat. Bake for 7-10 minutes to lightly toast bread. Cool to room temperature.
- Combine ingredients for dressing in a small bowl and whisk vigorously to combine.
- Combine mixed greens, peaches, tomatoes, pecans and toasted bread in a large bowl. Pour dressing on top and gently toss to coat.
- Transfer salad to a serving platter or bowl and top with crumbled goat cheese and fresh basil. Serve right away.
