This effervescent non-alcoholic cocktail gets a flavor boost from muddled mint and Dole mandarin orange pieces. It’s light and refreshing and the perfect accompaniment to just about any assertively flavored meal. Here’s looking at you, Taco Tuesday.

Ingredients

  • 1/4 packed cup fresh mint leaves
  • 1/4 cup DOLE® Frozen Tropical Gold® Pineapple Chunks
  • 1/4 cup DOLE® Canned Mandarin Oranges in Light Syrup, reserve 2oz syrup
  • 3 oz DOLE® Light Pineapple Juice Drink
  • 2 oz elderflower tonic

Steps to Sunshine!

  1. Muddle mint, pineapple chunks, mandarin oranges and mandarin juice in a collins glass.
  2. Top with crushed ice, then finish with pineapple juice and elderflower tonic.
  3. Swizzle to combine and garnish with mandarin skewer or lime wedge and mint bouquet.
