Moroccan Raisin n Date Flatbreads

This combines raisins and dates in with spices to make a wonderful appetizer.

Ingredients

  • 1 tsp ground cumin
  • 1 tsp garam masala seasoning
  • 1/4 tsp ground red pepper
  • 1 cup DOLE® California Golden Raisins
  • 3/4 cup water
  • 2 g garlic cloves, minced
  • 1 cup dry-roasted almonds
  • 1/2 cup olive oil
  • 3 tbsp lemon juice
  • - kosher salt and pepper
  • 4-6 Middle Eastern-style round flatbread or pita bread
  • 3/4 cup DOLE® California Chopped Dates
  • 1/4 cup fresh mint, chopped

Steps to Sunshine!

  1. Preheat gas grill with lid down on medium high heat.
  2. Combine cumin, garam masala and red pepper in medium sauce pan; Place pan directly on grill stirring spices constantly for 30 seconds until fragrant.
  3. Add raisins, water and garlic cloves; bring to a boil, stirring occasionally.  Remove from grill and cool slightly.
  4. Pour raisin mixture into food processor with almonds, olive oil and lemon juice.  Cover; process until smooth and season with salt and pepper.
  5. Heat flatbread on grill 3 to 4 minutes.  Remove from grill and place on large cutting board heated side up.  Spread heated sides of flatbread evenly with raisin mixture.
  6. Sprinkle with chopped dates; return to grill and cook with lid down, 4-5 minutes longer.
  7. Remove to cutting board and sprinkle with chopped mint.  Cut each flatbread into wedges; Garnish with additional raisins, dates and parsley sprigs if desired.
