3-5 large shrimp

3-9 leaves bibb lettuce cups

1/2 avocado, diced

6 grape tomatoes, halved

1 serrano chili pepper, chopped

1/4 cup cilantro, chopped

1 tbsp honey

1 tbsp olive oil

2 tsp ground coriander

2 tsp grated lime zest

salt & pepper, to taste

To make the dressing, whisk together cilantro, 2 tbsp of mango juice, honey, olive oil, ground coriander, lime zest, chopped chili, the juice of half a lime, and a pinch of salt & pepper in a bowl.

Toss your cooked shrimp into the dressing and let them soak up all those vibrant flavors.

Arrange your Bibb lettuce on a plate and top with mango chunks, diced avocado, and halved grape tomatoes to make the salad.
