  1. To make the dressing, whisk together cilantro, 2 tbsp of mango juice, honey, olive oil, ground coriander, lime zest, chopped chili, the juice of half a lime, and a pinch of salt & pepper in a bowl.
  2. Toss your cooked shrimp into the dressing and let them soak up all those vibrant flavors.
  3. Arrange your Bibb lettuce on a plate and top with mango chunks, diced avocado, and halved grape tomatoes to make the salad.
  4. Add your shrimp on top and drizzle the remaining dressing over everything.
  5. Garnish with a little extra lime juice or cilantro.
