Mango Kale and Quinoa Salad

You will need

  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/4 cup lemon juice
  • - pinch salt and pepper
  • 6 cups chopped kale leaves
  • 2-1/2 cups frozen DOLE® Mango Chunks, partially thawed
  • 1 cup cooked quinoa, cooled
  • 1/4 cup pumpkin seeds

Method

  1. Whisk together olive oil, honey, lemon juice, salt, and pepper in a large bowl.
  2. Add kale and toss with hands, squeezing kale while mixing.
  3. Add mango, quinoa, and pepitas.  Toss gently to coat.  Season with additional salt and pepper to taste.
