You will need

    tablespoons olive oil

    tablespoon honey

  • 1/4

    cup lemon juice

    pinch salt and pepper

  • 6

    cups chopped kale leaves

  • 2-1/2

    cups frozen DOLE® Mango Chunks, partially thawed

    cup cooked quinoa, cooled

  • 1/4

    cup pumpkin seeds

Method

    Whisk together olive oil, honey, lemon juice, salt, and pepper in a large bowl.

    Add kale and toss with hands, squeezing kale while mixing.

    Add mango, quinoa, and pepitas.  Toss gently to coat.  Season with additional salt and pepper to taste.
