You will need

  • 2 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 1/2 cups DOLE® Jarred Mandarin Oranges, drained with juice reserved
  • 6 cups baby kale
  • 1/3 cup crumbled feta cheese
  • 1/3 cup sunflower seeds

Method

  1. Combine olive oil, lemon juice, 2 tablespoons reserved juice, in a small bowl. Whisk to blend. Season to taste with salt and pepper.
  2. Add kale, mandarins, cheese, and sunflower seeds to large bowl. Pour dressing over and toss gently to coat.
