Cook tapioca according to package directions, substituting coconut extract for vanilla. Refrigerate for 2 to 4 hours or overnight.

Drain mandarin oranges, reserve 3 tablespoons juice in small bowl. Add basil. Microwave on HIGH for 60 seconds. Allow to cool; remove basil.

Spoon mandarin oranges into 2 bowls. Top with tapioca pudding and drizzle with basil mandarin sauce. Garnish with fresh basil, if desired.
