Cozy Chili

Our hearty and comforting Chili recipe made with ground beef, superior DOLE® Tropical Gold chunks, and kidney beans is a true crowd-favorite and will leave your guests wanting seconds (or save the rest frozen for a rainy day)! Requiring only 15 minutes of prep-time, this slow cooker recipe can be easily made ahead of any party or gathering.
Ingredients
- 1 tbsp ground cumin
- 1 tbsp chili powder
- 1-1/2 tsp kosher salt
- 3 lb lean ground beef
- 1 tbsp vegetable oil
- 1 can (15.25oz) Dole® Tropical Gold® Chunks, drained, juice reserved
- 3 tbsp hot sauce
- 3 tbsp cocoa powder
- 1 tbsp packed brown sugar
- 1 can (28 oz.) crushed tomatoes
- 1 can (15 oz.) kidney beans
- 1 tbsp garlic clove(s), minced
- 1 cup yellow onion, diced
Method
- Stir together cumin, chili powder, and salt in a large bowl. Add ground beef to spices and toss to coat.
- Heat oil in large skillet, then add the seasoned beef in batches and brown the meat on all sides and set aside.
- Stir together the reserved pineapple juice, hot sauce, cocoa powder, sugar, tomatoes, beans, garlic and onion in a slow cooker. Stir in browned beef and cover.
- Cook on high for 1-2 hours, till beef is tender and the flavor is developed. Add the pineapple chunks during the last 30 minutes.
- Serve chili with green onions, sour cream and shredded cheese, if desired.
