BBQ Bacon Quesadilla

Ingredients

  • 2 bacon, slices
  • 1/2 tsp butter
  • 1 10” flour tortilla
  • 1/2 cup shredded mozzarella
  • 1/8 cup (20oz.) DOLE® Canned Pineapple Chunks in 100% Pineapple Juice, drained and diced
  • 2 tbsp barbecue sauce

Steps to Sunshine!

  1. Preheat a skillet over low heat. Add bacon and cook until crisp, flipping regularly. Remove with a slotted spoon to a paper towel lined plate. Crumble into small pieces.
  2. Melt ½ tsp of butter in a separate, nonstick skillet set to medium heat. Place tortilla in the center of the skillet, and sprinkle mozzarella on the right half.
  3. Add diced pineapple and cooked bacon on top of the cheese. Using a spoon, drizzle two tablespoons of barbecue sauce on top of the pineapple-bacon mixture. Cook until the cheese is slightly melted.
  4. Fold the left side of the tortilla over the right using a spatula and gently flip. Cook for an additional minute until slightly browned.
  5. Remove from heat and slice into wedges.
