Peach Panzanella Salad

You will need

  • 2

    cups cubed crusty bread

  • 2

    tbsp olive oil

  • 1

    (5 oz.) bag DOLE 50/50 mixed greens

  • 2

    cups DOLE® Jarred Sliced Peaches, drained

  • 1

    cup halved campari or cherry tomatoes

  • 1/2

    cup toasted pecan halves

  • 1/2

    cup crumbled chèvre goat cheese, crumbled

  • 2

    tbsp chopped basil

    For Dressing:

  • 1/4

    cup reserved peach juice 

  • 3

    tbsp olive oil

  • 2

    tbsp champagne vinegar

  • 1

    tsp dijon mustard

  • 1/4

    tsp salt

  • 1/8

    tsp cracked black pepper

    Preheat oven to 375ºF and spread cubed bread on a medium baking sheet. Drizzle with olive oil and toss to coat. Bake for 7-10 minutes to lightly toast bread. Cool to room temperature.

    Combine ingredients for dressing in a small bowl and whisk vigorously to combine.

    Combine mixed greens, peaches, tomatoes, pecans and toasted bread in a large bowl. Pour dressing on top and gently toss to coat.

    Transfer salad to a serving platter or bowl and top with crumbled goat cheese and fresh basil. Serve right away.
