BBQ Bacon Quesadilla
Pineapple is the secret ingredient in this delicious snack!
Ingredients
- 2 slices bacon
- 1/2 tsp butter
- 1 10” flour tortilla
- 1/2 cup shredded mozzarella
- 1/8 cup (20oz.) DOLE® Canned Pineapple Chunks in 100% Pineapple Juice, drained and diced
- 2 tbsp barbecue sauce
Method
- Preheat a skillet over low heat. Add bacon and cook until crisp, flipping regularly. Remove with a slotted spoon to a paper towel lined plate. Crumble into small pieces.
- Melt ½ tsp of butter in a separate, nonstick skillet set to medium heat. Place tortilla in the center of the skillet, and sprinkle mozzarella on the right half.
- Add diced pineapple and cooked bacon on top of the cheese. Using a spoon, drizzle two tablespoons of barbecue sauce on top of the pineapple-bacon mixture. Cook until the cheese is slightly melted.
- Fold the left side of the tortilla over the right using a spatula and gently flip. Cook for an additional minute until slightly browned.
- Remove from heat and slice into wedges.
