Pineapple Salsa Verde

Ingredients
- 1 lb tomatillos, peeled
- 1 yellow onion, cut in half
- 1 cup (8oz.) DOLE® Pineapple Tidbits in 100% Pineapple Juice
- 1 jalapeno peppers, diced
- 1 garlic clove(s)
Method
- Roast tomatillos and onion in the oven at 375 degrees until soft, about 25 minutes. Remove from oven and set aside to cool for half an hour.
- Combine tomatillos, onion and remaining ingredients in a food processor and pulse a few times to reach a chunky consistency.
- Serve with chips, cooked chicken or on top of goat cheese.
