Layered Mandarin Coconut Tapioca with Basil Infused Mandarin Sauce

Ingredients

  • 4 tsp dry pearl tapioca
  • 1 egg
  • 1-1/4 cup milk
  • 1/4 cup sugar
  • 1 tsp pure coconut extract
  • 3/4 cup DOLE® Jarred Mandarin Oranges in 100% Juice
  • 6 basil

Method

  1. Cook tapioca according to package directions, substituting coconut extract for vanilla.  Refrigerate for 2 to 4 hours or overnight.
  2. Drain mandarin oranges, reserve 3 tablespoons juice in small bowl.  Add basil.  Microwave on HIGH for 60 seconds.  Allow to cool; remove basil.
  3. Spoon mandarin oranges into 2 bowls.  Top with tapioca pudding and drizzle with basil mandarin sauce.  Garnish with fresh basil, if desired.
