Layered Mandarin Coconut Tapioca with Basil Infused Mandarin Sauce
A refreshing light dessert that combines tapioca with sweet mandarin oranges and a savory basil sauce.
Ingredients
- 4 tsp dry pearl tapioca
- 1 egg
- 1-1/4 cup milk
- 1/4 cup sugar
- 1 tsp pure coconut extract
- 3/4 cup DOLE® Jarred Mandarin Oranges in 100% Juice
- 6 basil
Method
- Cook tapioca according to package directions, substituting coconut extract for vanilla. Refrigerate for 2 to 4 hours or overnight.
- Drain mandarin oranges, reserve 3 tablespoons juice in small bowl. Add basil. Microwave on HIGH for 60 seconds. Allow to cool; remove basil.
- Spoon mandarin oranges into 2 bowls. Top with tapioca pudding and drizzle with basil mandarin sauce. Garnish with fresh basil, if desired.
