Mango Kale and Quinoa Salad
A delicious sweet and savory salad.
Ingredients
- 2 tbsp olive oil
- 1 tbsp honey
- 1/4 cup lemon juice
- - pinch salt and pepper
- 6 cup chopped kale leaves
- 2-1/2 cup DOLE® Frozen Mango Chunks, partially thawed
- 1 cup cooked quinoa, cooled
- 1/4 cup pumpkin seeds
Method
- Whisk together olive oil, honey, lemon juice, salt, and pepper in a large bowl.
- Add kale and toss with hands, squeezing kale while mixing.
- Add mango, quinoa, and pepitas. Toss gently to coat. Season with additional salt and pepper to taste.
