Weeknight Carnitas Tacos
Elevate weeknight meals with carnitas tacos and a vibrant pineapple salsa.
Ingredients
- 1 package prepared pork carnitas
- 3/4 can (20oz.) DOLE® Canned Pineapple Chunks in 100% Pineapple Juice
- 2 tbsp finely chopped green onions
- 2 tbsp cilantro
- 1 avocado, pitted, peeled, diced
- 1 tbsp lime juice
- 6 corn tortillas, warmed
Method
- Warm carnitas according to package directions.
- Combine pineapple, green onion, cilantro, avocado, and lime juice in a medium bowl. Stir well.
- Serve pork with corn tortillas and pineapple salsa.
- TIP: To save time, try this Salsa Hack: Combine drained and chopped pineapple with 1/2 cup prepared salsa and 1/2 avocado, diced, in a medium bowl. Stir well.
