Pineapple Chicken Crunchy Wrap
Keep hunger at bay with this satisfying and sweet wrap!
Ingredients
- 1 tbsp olive oil
- 1/2 cup (20oz.) DOLE® Pineapple Tidbits in 100% Pineapple Juice, drained
- 1/4 cup red onion, diced
- 2 jalapeno peppers, diced
- 1 tbsp lime juice
- 4 l large (12”) flour tortillas
- 1/2 cup cheddar cheese, shredded
- 1 lb boneless, skinless chicken breasts, cooked, cut into ½-inch pieces
- 4 corn tostadas, street-sized
- 1/2 cup sour cream
- 1 cup shredded lettuce
- 1 cup cherry tomatoes, chopped
- to taste salt
- to taste hot sauce
Method
- Heat oil in a large skillet over medium-high heat. Add pineapple, red onion and jalapeno; top with a pinch of salt to taste. Cook for 5 minutes stirring occasionally until ingredients are caramelized. Add lime juice and remove from heat. Wipe pan clean.
- Warm a large tortilla in the microwave or on the stovetop, then lay on a flat service ready for assembly.
- Place a thin layer of cheese in the center of the tortilla. Add chicken and pineapple, onion and jalapeno mixture. Place one tostada on top and spread with a layer of sour cream, lettuce, tomatoes, and a sprinkle of hot sauce.
- Wrap the tortilla sides up and over the tostada and gently place the wrap, folded side down onto the hot skillet. Cook for 2-3 minutes or until golden and toasted. Flip and cook an additional 2-3 minutes.
- Slice and serve hot.
