Blueberry Cranberry Chicken Salad
A fresh and fulfilling healthy salad.
Ingredients
- 2 cup boneless, skinless chicken breasts, cooked, cubed
- 1-1/2 cup DOLE® Frozen Blueberries
- 1 cup dried cranberries
- 1/2 cup celery
- 1/2 cup red bell pepper, diced
- 1/4 cup green onion, thinly sliced
- 1/2 cup lemon lowfat yogurt
- 2 tbsp mayonnaise
- 1/4 tsp salt
- 1 package (6 oz.) sweet butter lettuce
Method
- Combine chicken, blueberries, cranberries, celery, bell pepper and green onions in large bowl.
- Whisk together yogurt, mayonnaise and salt in small bowl. Gently fold into chicken-fruit mixture; chill.
- Arrange salad blend on small plates and spoon chicken-fruit mixture over salad.
