Asparagus and Arugula Salad with Mandarin Oranges
A sweet, green salad. Goes great by itself or as a compliment to an entree.
Ingredients
- 1 lb asparagus, trimmed, cut into 1 inch pieces, blanch
- 6 oz Arugula, washed and stemmed
- 1 can (15 oz) canellini beans, rinsed and drained
- 1 can (11 oz) DOLE® Canned Mandarin Oranges In Light Syrup, drained
- 1/2 Red Onion, thinly sliced
- 1/2 cup fat free raspberry dressing
Method
- Combine asparagus, arugula, beans, oranges and onion in medium salad bowl.
- Pour dressing over and toss to coat.
