Asparagus and Arugula Salad with Mandarin Oranges

Ingredients

  • 1 lb asparagus, trimmed, cut into 1 inch pieces, blanch
  • 6 oz Arugula, washed and stemmed
  • 1 can (15 oz) canellini beans, rinsed and drained
  • 1 can (11 oz) DOLE® Canned Mandarin Oranges In Light Syrup, drained
  • 1/2 Red Onion, thinly sliced
  • 1/2 cup fat free raspberry dressing

Method

  1. Combine asparagus, arugula, beans, oranges and onion in medium salad bowl.
  2. Pour dressing over and toss to coat.
