Sparkling Peach Jell-ini
A sparkling jelly that's full of sweet peaches.
Ingredients
- 1 cup DOLE® Jarred Sliced Peaches in 100% Fruit Juice
- 1 envelope unflavored gelatin
- 2 tbsp honey
- 2 tsp lemon juice
- 1 cup sparkling water
Method
- Drain peach slices; reserve 1/2 cup juice.
- Combine 1/2 cup reserved juice, gelatin, honey, and lemon juice in a small saucepan. Let stand for 5 minutes to allow gelatin to soften. Heat over low to dissolve gelatin, whisking to blend.
- Add sparkling water to a bowl set over an ice bath. Add gelatin mixture to bowl, stirring gently. Allow to cool until mixture is the consistency of egg whites, about 15 minutes.
- Divide pears between two 8-oz. serving glasses. Pour gelatin mixture over. Chill until set, about 3 hours.
