Shrimp and Pineapple Lettuce Cups
Shrimp and pineapple lettuce cups makes a perfect snack
Ingredients
- 1/2 cup plum sauce
- 2 tbsp reduced sodium soy sauce
- 1 tsp sriracha
- 3 cup white rice, cooked
- 1 lb large shrimp, halved lengthwise
- 1 can (20oz.) DOLE® Canned Pineapple Chunks in 100% Pineapple Juice, drained and chopped
- 1 cup cucumber(s), grated
- 1 cup carrot(s), grated
- 1/4 cup cilantro, chopped
- 12 bibb lettuce cups
Method
- Combine plum sauce, soy sauce and sriracha in medium bowl; reserve.
- Combine cooked rice, shrimp halves, chopped pineapple, carrots, cucumber and cilantro in large bowl. Toss with sauce mixture as desired.
- Divide evenly in lettuce cups; serve with any remaining sauce.
