Hawaiian Cowboy Casserole

Comfort food with a touch of island flavor!

Ingredients

  • 1 (32 oz.) frozen tater tots bag
  • 4 slice bacon
  • 1 cup yellow onion, diced
  • 1 tbsp garlic clove(s), minced
  • 1 lb ground beef
  • 1 tsp salt
  • 1 cup pickled jalapeno, sliced, and roughly chopped
  • 1 can (20oz.) DOLE® Canned Pineapple Chunks in 100% Pineapple Juice, drained
  • 1/4 cup milk
  • 1 can (15 oz.) butternut squash soup
  • 1 cup cheddar cheese
  • 1/2 cup grated parmesan cheese
  • chives, minced as needed for garnish

Method

  1. Preheat oven to 425 degrees. Thaw tater tots in a bowl while prepping recipe.
  2. Heat a large cast iron skillet over medium-high heat; cook bacon about six minutes or until crisp. Remove bacon and set aside to cool; reserve the bacon fat in the pan.
  3. Add onions and garlic to the bacon fat and cook until caramelized and aromatic. Add pork; break up with a wooden spoon and cook until no longer pink. Season with salt.
  4. Add pineapple, jalapenos, soup, milk, and cheese and mix well; turn off heat. Arrange the tater tots in a single layer on top of the mix. Top with parmesan cheese and chopped bacon pieces.
  5. Place in oven and cook for 15-20 minutes, or until the tater tots are golden brown and the skillet is bubbling. Remove from the oven carefully, and garnish with chives and extra bacon if desired. Enjoy while warm.
