Pineapple Salsa

You will need
- 1 tin (567g) DOLE® Pineapple Tidbits or Chunks, reserve ¼ cup of the juice
- 1/2 cup red pepper, diced
- 1/4 cup green pepper, diced
- 1 cup DOLE spring onions, chopped
- 2 teaspoons fresh coriander or parsley, chopped
- 2 teaspoons jalapeño chillis, chopped
- 1 teaspoon lime zest
Method
- Combine pineapple, pineapple juice, peppers, onion, coriander, chillies, and lime zest in a medium bowl.
- Serve salsa at room temperature or slightly chilled.
- Use salsa served over chicken or fish, as a dip with tortilla crisps, spooned over quesadillas or tacos.
