Chipotle Shrimp and Pineapple Kabobs

Enjoy the sweet taste of Tropical Gold pineapple combined with spicy chipotle pepper and shrimp for fun and fast kabobs.

You will need

  • 1/2 cup bottled baja chipotle marinade with lime juice, divided
  • 250g large shrimp, peeled and deveined
  • 1 can (432g) DOLE® Tropical Gold Pineapple Chunks, drained
  • 1 small red onion, cut into chunks
  • 1 red bell pepper, cut into chunks

Method

  1. Pour the baja marinade over the shrimps in a large sealable container.
  2. Refrigerate and marinate for 30 minutes.

  3. Remove shrimp from Baja marinade.
  4. Thread the shrimp, pineapple chunks, onion and bell peppers onto skewers.
  5. Grill or broil for 8 minutes turning and brushing with reserved baja marinade or until shrimp turns pink.
