Bacon Wrapped Pineapple

You will need
450g bacon rashers
1 tin (567g) DOLE® Pineapple Chunks, drained
2 tablespoons packed brown sugar
1/2 teaspoon chipotle chilli powder
- Preheat oven to 200°C. Line baking sheet with foil and place on the top shelf of the oven.
- Cut each bacon rasher into thirds. Stir sugar and chilli powder together in a medium bowl. Lightly toss pineapple chunks in sugar mixture to coat.
- Wrap each pineapple chunk with one piece of bacon. Place seam-side down on baking sheet.
- Bake 30-40 minutes or until desired crispness.
