You will need

  • 450g bacon rashers
  • 1 tin (567g) DOLE® Pineapple Chunks, drained
  • 2 tablespoons packed brown sugar
  • 1/2 teaspoon chipotle chilli powder

Method

  1. Preheat oven to 200°C. Line baking sheet with foil and place on the top shelf of the oven.
  2. Cut each bacon rasher into thirds. Stir sugar and chilli powder together in a medium bowl. Lightly toss pineapple chunks in sugar mixture to coat.
  3. Wrap each pineapple chunk with one piece of bacon. Place seam-side down on baking sheet.
  4. Bake 30-40 minutes or until desired crispness.
