Delicious little coconut treats for everyone to enjoy.
1 jar (23.5 oz) DOLE Tropical Fruit
Measure 1-1/2 cups fruit and 1/4 cup syrup for recipe. Finely dice fruit.
Lightly spray 32 miniature-muffin cups with vegetable cooking spray.
2 cups prepared baking mix1/4 cup apple juicereserved syrupdiced fruit
Combine baking mix, apple juice, reserved syrup and diced fruit in large mixing bowl, mixing just until combined (mixture will be thick).
1/4 cup shredded coconutSugar (optional)
Spoon about 1 tablespoon mixture into each prepared muffin cup. Sprinkle tops with coconut and small amount of sugar, if desired. Bake at 350ºF., for 12 to 15 minutes or until lightly brown. Remove from pans and cool on wire racks.
