Romaine Mandarin Oranges and Avocado Salad
Brilliantly colorful salad
Calories per serving
- 4 teaspoons red wine vinegar
- 2 teaspoons Dijon mustard
- 2 teaspoons honey
- 1/4 cup extra virgin olive oil
- to taste Salt and freshly ground black pepper
- 1 pkg. (9 oz.) DOLE® Classic Romaine
- 1/2 avocado, seeded, peeled and cubed
- 1 can (15 oz.) DOLE Mandarin Oranges, drained
- 2 radishes, sliced
- Mix vinegar, mustard, and honey in small bowl. Whisk in olive oil and season with salt and pepper.
- Combine salad, avocado, mandarin oranges and radishes in large bowl. Add dressing and toss to coat.
- Tip: Can substitute bottled red wine vinaigrette for the dressing, if desired.
