1-1/4 pounds small or medium DOLE® Idaho Red or Gold Potatoes,
1/2 cup plain nonfat yogurt,
1/2 cup lowfat milk,
2 tablespoons healthy "butter" spread,
Salt and ground white or black pepper, to taste,
Step 1: Place whole potatoes (do not poke) into microwave-safe dish; cover. (If covering dish until plastic wrap, poke small hole in plastic.) Microwave on HIGH for 10 to 15 minutes or until potatoes are tender when poked with a fork. Use oven mitts to remove dish from microwave, carefully remove cover.
Step 2: Mash potatoes in dish with potato masher or large fork. Add yogurt, milk, spread, salt and pepper, to taste; mix well. Microwave for 1 to 2 minutes more to heat through, if necessary.
