3 ea fresh jalapeno pepper, diced
1 ea seedless cucumber, finely diced
2 tablespoons chopped fresh mint
1/2 cup chopped fresh cilantro
2 ea lime, juiced
4 ea tostada shell
  salt and ground black pepper, to taste

1/2 ea red onion, small diced
3 ea jalapeno peppers, small diced
1 ea cucumber, small diced
2 tablespoons chopped fresh mint
1/2 cup chopped fresh cilantro
2 limes, juiced
4 ea tostada shells
Salt and pepper, to taste

Direction

Small dice the red onion, jalapeno, cucumber and add to a large mixing bowl.  Add shrimp, pineapple cubes, lime juice, mint, and cilantro.  Season with salt and pepper, to taste.  Serve over tostada shell.
