Ingredients (8)
  • 2 cans (20 oz.) DOLE® Crushed Pineapple
  • 1 large cucumber, peeled and chopped
  • 1 tablespoon lime juice
  • 1 jalapeno pepper, halved and seeded
  • 3-4 green onions, thinly sliced
  • 2 tablespoons finely chopped fresh cilantro
  • 1/2 teaspoon sea salt
  • ground black pepper, to taste
  1. Combine pineapple and cucumber in a blender. Cover; blend until smooth.
  2. Add lime juice, jalapeno, green onions, cilantro, salt, and pepper to blender. Cover; blend until smooth.
  3. Transfer soup to a container and refrigerate for 30 minutes.
  4. Ladle soup into bowls and garnish with additional cilantro. Serve chilled.
