1/2 cup DOLE® Pineapple Juice
2 tablespoons fresh lemon juice
2 tablespoons white wine vinegar
1/4 teaspoon sugar
1 tablespoon Dijon mustard
6 tablespoons olive oil
Salt and freshly ground black pepper, to taste
Combine pineapple juice, lemon juice, vinegar, sugar, and mustard in a small bowl. While whisking, slowly add the olive oil until the vinaigrette is emulsified. Refrigerate until ready to use. Serve with green salad.
