Island Vinaigrette A simple vinaigrette great for dressing a green salad. Sauces/Salsas Island Vinaigrette Island Vinaigrette thumbnail Preparation Time: 10 minutes Total time: 10 minutes 6 Servings Ingredients: 1/2 cup DOLE® Pineapple Juice, 2 tablespoons fresh lemon juice, 2 tablespoons white wine vinegar, 1/4 teaspoon sugar, 1 tablespoon Dijon mustard, 6 tablespoons olive oil, salt and pepper, to taste, Instructions: Combine pineapple juice, lemon juice, vinegar, sugar, and mustard in a small bowl.  While whisking, slowly add the olive oil  until the vinaigrette is emulsified.  Refrigerate until ready to use.  Serve with green salad.

Direction
