2 lb tomatoes , peeled, seeded and cubed,
1 medium medium cucumber, peeled and cubed,
1 cup celery, sliced,
1 medium DOLE® Carrots, peeled and cubed,
1/2 DOLE Onion, cubed,
2 garlic cloves, halved,
2 cups low sodium vegetable juice, chilled,
2 cup tomato juice, chilled,
1/4 cup red wine vinegar,
3 tbsp olive oil,
ground black pepper,
Step 1: Place tomatoes, cucumber, celery, carrots, onion and garlic in food processor container.
Step 2: Cover and process until chopped but not pureed.
Step 3: Pour into large bowl, stir in vegetable juice, tomato juice, vinegar and oil.
Step 4: Season with ground pepper to taste.
