Ingredients (9)
  • 4 ounces uncooked bowtie or corkscrew (fusilli) pasta
  • 1 can (8 oz.) DOLE® Pineapple Chunks
  • 1/2 cup fat free or reduced fat mayonnaise
  • 2 teaspoons packed brown sugar
  • 1 teaspoon curry powder
  • 1 can (11 to 15 oz.) DOLE Mandarin Oranges, drained
  • 1-1/2 cups cooked chicken breast or turkey breast, chopped
  • 1/2 cup sliced DOLE Celery
  • 1/4 cup chopped DOLE Green Onions
Directions
  1. Cook pasta as package directs; drain.
  2. Drain pineapple chunks; reserve 3 tablespoons juice.
  3. Stir together reserved juice, mayonnaise, sugar and curry in large serving bowl.
  4. Add pasta, pineapple chunks, mandarin oranges, chicken, celery and green onions to curry dressing; toss to evenly coat.  Serve on lettuce-lined plate and garnish with shredded red cabbage, if desired.
