DOLE® Pineapple Chunks, 2 tablespoons cornstarch, 1 tablespoon sesame oil, 6 individual TYSON® Boneless Skinless Chicken Thighs, cubed, 1 large green bell pepper, diced, 3 tablespoons KIKKOMAN® Hoisin Sauce, 2 tablespoons KIKKOMAN® Soy Sauce, 1 tablespoon packed brown sugar, 1/4 teaspoon garlic salt, 1/4 teaspoon ground ginger, 1 cup cherry tomatoes, cut in half, 1/2 cup (optional) cashews, toasted and chopped, Instructions: Step 1: Heat large skillet over medium-high heat; add oil and brown chicken for 5 minutes.  Add bell pepper; cook for an additional 3 minutes.  Stir in pineapple juice, hoisin sauce, soy sauce, brown sugar, garlic salt and ginger and cook for an additional 5 minutes.  Add pineapple, cherry tomatoes and cornstarch mixture, cook until sauce thickens. Serve over rice and top with cashews.
Step 2: Prepare rice according to package directions; set aside
Step 3: Drain pineapple; reserve juice.  Mix 1/4 cup juice with cornstarch; set aside.
