Ingredients (13)
  • 2 cups MINUTE® White Rice, uncooked
  • 1 can (20 oz.) DOLE® Pineapple Chunks
  • 1/4 teaspoon ground ginger
  • 1 cup cherry tomatoes, cut in half
  • 1/2 cup (optional) cashews, toasted and chopped
  • 2 tablespoons cornstarch
  • 1 tablespoon sesame oil
  • 6 individual TYSON® Boneless Skinless Chicken Thighs, cubed
  • 1 large green bell pepper, diced
  • 3 tablespoons KIKKOMAN® Hoisin Sauce
  • 2 tablespoons KIKKOMAN® Soy Sauce
  • 1 tablespoon packed brown sugar
  • 1/4 teaspoon garlic salt
  1. Heat large skillet over medium-high heat; add oil and brown chicken for 5 minutes.  Add bell pepper; cook for an additional 3 minutes.  Stir in pineapple juice, hoisin sauce, soy sauce, brown sugar, garlic salt and ginger and cook for an additional 5 minutes.  Add pineapple, cherry tomatoes and cornstarch mixture, cook until sauce thickens. Serve over rice and top with cashews.
  2. Prepare rice according to package directions; set aside
  3. Drain pineapple; reserve juice.  Mix 1/4 cup juice with cornstarch; set aside.
