Carnitas and Pineapple Pizza

Ingredients 9

Ingredients

1 medium onion, julienne strips
1 teaspoon vegetable oil
8 ounces coarsely, shredded cooked pork carnitas
3 tablespoons, softened butter
1/2 teaspoon chipotle powder
1/2 teaspoon ground cumin
1 12 to 14" pizza crust,partially cooked
1 can (20 oz.) DOLE® Pineapple Chunks, drained
1-1/2 cups (6 oz.) shredded manchego or queso blanco cheese

Steps

STEP1
Ingredients

1 medium onion, sliced length wise in half, then sliced lengthwise into   julienne strips (about 1-1/2 cups)
1 teaspoon vegetable oil
8 ounces coarsely, shredded cooked pork carnitas

Direction

Cook onion in oil in large non-stick skillet until onion is just tender, stirring occasionally.  Add carnitas; cook just to heat through.

STEP2
Ingredients

3 tablespoons butter, softened
1/2 teaspoon chipotle powder
1/2 teaspoon ground cumin
1 (12 to 14 inch) pizza crust, partially cooked

Direction

Combine butter, chipotle powder and cumin in small bowl.  Brush butter mixture over crust.

Ingredients

1 can (20 oz.) DOLE Pineapple Chunks, drained
1-1/2 cups (6 oz.) shredded manchego or queso blanco cheese

Direction

Top with carnitas mixture and pineapple chunks; sprinkle with cheese.

STEP4

Direction

Bake at 450ºF., for 12 to 15 minutes or until crust is golden brown.  Garnish with chopped cilantro, if desired.

NOTE: If using unbaked pizza dough, bake for 15 to 20 minutes.
