1 medium onion, julienne strips,
1 teaspoon vegetable oil,
8 ounces coarsely, shredded cooked pork carnitas,
3 tablespoons, softened butter,
1/2 teaspoon chipotle powder,
1/2 teaspoon ground cumin,
1 12 to 14" pizza crust,partially cooked,
1 can (20 oz.) DOLE® Pineapple Chunks, drained,
1-1/2 cups (6 oz.) shredded manchego or queso blanco cheese,
Step 1: Cook onion in oil in large non-stick skillet until onion is just tender, stirring occasionally. Add carnitas; cook just to heat through.
Step 2: Combine butter, chipotle powder and cumin in small bowl. Brush butter mixture over crust.
Step 3: Top with carnitas mixture and pineapple chunks; sprinkle with cheese.
Step 4: Bake at 450ºF., for 12 to 15 minutes or until crust is golden brown. Garnish with chopped cilantro, if desired.
Step 5: NOTE: If using unbaked pizza dough, bake for 15 to 20 minutes.
