- 1 can (20 oz.) DOLE® Pineapple Chunks
- 3 pounds medium yams
- 3/4 cup sugar
- 1/2 cup margarine
- 1 teaspoon ground cinnamon
- 1/2 teaspoon mace
- 1 DOLE Apple, cored, sliced
Drain pineapple, reserve 3/4 cup juice. Cook yams in boiling water 25 to 35 minutes until tender. Drain, allow to cool.
Peel and slice yams 1/2-inch thick. In large skillet, combine reserved pineapple juice, sugar, margarine, cinnamon and mace.
Bring to a boil; cook until sugar is dissolved, stirring often. Simmer 15 to 20 minutes or until sauce reduces some. Add apple slices, cook 2 to 3 minutes. Add yams and pineapple. Coat with syrup mixture until well glazed.
