Calcutta Fruit Salad
A fruit salad inspired by Indian cuisine.
Calories per serving
- 1 can (20 oz.) DOLE® Pineapple Chunks, drained
- 1 can (11 oz.) DOLE Mandarin Oranges, drained
- 1/4 cup peanuts
- 1/4 cup lemon yogurt
- 1/4 Cup shredded coconut
- 2 tablespoons chopped chutney
- 1/2 teaspoon curry powder
- 1 pkg. (5 oz.) DOLE Spring Mix
- Combine pineapple, mandarin oranges and peanuts, in medium bowl.
- Blend together yogurt, coconut, chutney and curry powder. Pour over fruit and gently mix.
- Spoon onto salad plates lined with salad greens.
