A delicious breakfast cake to wake you right up.
Preheat oven to 350°F.
3 eggs3/4 cup packed brown sugar1/3 cup low fat buttermilk1/3 cup canola oil1-1/2 tsp vanilla extract1-1/2 cups quick cooking oats1 cup all-purpose flour3/4 cup whole wheat flour1 tbsp baking powder3/4 tsp salt1-1/2 tsp ground cinnamon
Combine eggs, brown sugar, buttermilk, oil and vanilla in medium bowl. Combine oats, flours, baking powder, salt and cinnamon in large bowl. Add egg mixture to flour mixture. Stir until just moistened, do not over mix.
1 can (20 oz) DOLE Crushed Pineapple, undrained3 medium DOLE Bananas, diced
Gently fold in pineapple and diced bananas. Pour into 13x9-inch baking pan, sprayed with nonstick cooking spray.
Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean. Cool until just warm. Sprinkle with powdered sugar, if desired.
