2 extra-ripe, medium DOLE® Banana(s), peeled,
3/4 cup 100% bran cereal,
1/2 cup milk,
1/4 cup light molasses,
2 tablespoons vegetable oil,
1 cup all-purpose flour,
1 teaspoon baking soda,
1/4 teaspoon salt,
3/4 cup DOLE Raisins,
Step 1: Preheat oven to 375F. Line a 12-cup muffin pan with paper liners.
Step 2: Slice bananas into blender. Cover; blend until smooth (1 cup). Soften bran cereal in milk. Combine bananas, egg, molasses and oil until blended.
Step 3: Combine flour, soda and salt. Stir flour and moistened bran mixture into banana mixture until just moistened. Fold in raisins. Spoon into prepared pan.
Step 4: Bake 15 to 17 minutes or until a wooden skewer inserted in center comes out clean. Serve warm.
