Asian Zoodle Salad
A vegan vegetable salad that's sweetened with Mandarin Oranges.
Calories per serving
- 4 zucchini, spiralized or julienned
- salt and pepper, to taste
- 2 large carrots, peeled, spiralized or julienned
- 1/2 cup shredded red cabbage
- 1 medium red bell pepper, cut into 1/2-inch strips
- 1 can (15 oz.) DOLE® Mandarin Oranges, drained
- 1/4 cup bottled Asian sesame ginger salad dressing
- 2 tablespoons chopped green onions
- 2 tablespoons chopped fresh cilantro
- 2 teaspoons sesame seeds
- Add zucchini noodles to a large serving bowl and season with salt and pepper. Massage zucchini noodles with hands to soften.
- Add carrots, cabbage, bell pepper, mandarins, green onions, and salad dressing. Toss gently to coat.
- Sprinkle cilantro and sesame seeds on top of salad and serve immediately.
