Ingredients (5)
  • 1 cup (about 8 slices) DOLE® Fridge Pack Peach Slices
  • 1 envelope unflavored gelatin
  • 2 tablespoons honey
  • 2 teaspoons lemon juice
  • 1 cup sparkling water
  1. Drain peach slices; reserve 1/2 cup juice.  
  2. Combine 1/2 cup reserved juice, gelatin, honey, and lemon juice in a small saucepan.  Let stand for 5 minutes to allow gelatin to soften. Heat over low to dissolve gelatin, whisking to blend.
  3. Add sparkling water to a bowl set over an ice bath. Add gelatin mixture to bowl, stirring gently. Allow to cool until mixture is the consistency of egg whites, about 15 minutes.
  4. Divide pears between two 8-oz. serving glasses.  Pour gelatin mixture over. Chill until set, about 3 hours.
