Ingredients (6)
  • 1 cup DOLE® Fridge Pack Pineapple Chunks
  • 2 cups cooked orzo
  • 1/2 cup frozen peas, thawed
  • 1 cup arugula
  • 1/4 cup sliced almonds, toasted
  • Pineapple Sesame Dressing see recipe
  1. Drain pineapple chunks, reserve 2 tablespoons juice.  
  2. Combine orzo, peas, pineapple chunks, arugula together in medium bowl.  Toss with pineapple sesame dressing to evenly coat.  Sprinkle almonds over salad.  
  3. Pineapple Sesame Dressing:  Whisk together 2 tablespoons reserved pineapple juice, 1 tablespoon sesame oil, 2 teaspoons white wine vinegar and 1 teaspoon toasted sesame seeds in small bowl.
