- 2 cans (20 oz.) DOLE® Crushed Pineapple
- 1 large cucumber, peeled and chopped
- 1 tablespoon lime juice
- 1 jalapeno pepper, halved and seeded
- 3-4 green onions, thinly sliced
- 2 tablespoons finely chopped fresh cilantro
- 1/2 teaspoon sea salt
- Combine pineapple and cucumber in a blender. Cover; blend until smooth.
- Add lime juice, jalapeno, green onions, cilantro, salt, and pepper to blender. Cover; blend until smooth.
- Transfer soup to a container and refrigerate for 30 minutes.
- Ladle soup into bowls and garnish with additional cilantro. Serve chilled.
