Ingredients (7)
  • 3/4 cup DOLE® Fridge Pack Mandarin Oranges
  • 2 cups cooked black or brown rice
  • 1/2 cup shelled edamame, cooked
  • 1/2 cup red bell pepper, diced
  • 3 green onion, sliced
  • 1/4 cup dry roasted cashews, chopped
  • Mandarin Dressing see recipe
  1. Drain mandarin oranges; reserve 2 tablespoons juice for dressing.  
  2. Divide warm rice between 2 plates.  Top with edamame, bell pepper and onion.  Sprinkle mandarin oranges over salad.  Drizzle dressing over salad.  Top with cashews.    

  3. Mandarin Dressing:  Whisk together reserved mandarin juice, 1 tablespoon sesame oil, 2 teaspoons lime juice, 1 teaspoon crushed garlic and 1/4 to 1/2 teaspoon red cayenne pepper in small bowl, until blended.
